    4 c pinto beans, dry
    2 pkg taco seasoning
    8 oz smoked sausage, sliced or cubed
    2 T Garlic
    Pepper to taste
    Water to cover


Boil dry pinto beans for 2 minutes in enough water to cover to soak them. Turn off the heat and cover. Let set 2 hours.
Drain soak water.
Put beans in a large crockpot with smoked sausage, taco seasoning, and enough water to cover (about 4 quarts). cook on low 8 - 10 hours. If you want it thicker, you can smash some of the beans when you're ready to serve. If you want it thicker than that, take a cup of the cooking liquid after they're done, and add about 1 c. flour to it. Stir into a paste and then add it to the beans.
Serve in warm tortillas and top with shredded cheese and/or sour cream (garnishes not included in calorie count).
