Number of Servings: 8


    2 tbs extra virgin olive oil
    1 large yellow onion
    3 cloves of minced garlic
    2 cups of 2% milk
    1 (28 oz ) can of tomato puree
    1 (28 oz) can of diced tomatoes
    1 tbs of white sugar
    2 cups of fresh spinach
    3 tbs of dried basi or 1/3 cup of fresh basil
    1 tsp salt
    1/2 tsp of black pepper
    1/4 cup of grated parmesan cheese


Saute chopped onions in olive oil until almost cooked, add minced garlic continue cooking until onions are cooked. Stir in milk, tomato puree, diced tomatoes, sugar and seasonings. Bring to a boil, then simmer for 15 minutes or so (really, the longer you cook it the better). Add spinach (and fresh basil) and simmer a few more minutes. Stir in parmesan cheese.
