Ingredients

    2 egg white
    scant 1/2 cup soft brown sugar
    1 cup ground almonds
    1 tsp ground ginger
    1/2 tsp ground cinnamon

Directions

Preheat oven to 350F Line 2 baking sheets with baking parchment. Whisk the egg white in a large clean grease free bowl until stiff and standing in peaks but not dry and crumbly the gradually whisk in brown sugar. Sprinkle with ground almonds and spices over whisked egg white and gently fold in.
Using 2 tsps place in spoonfuls on baking sheets bake for 20 minutes until golden leave to cool slightly on the baking sheets before transferring to cooling rack
