    1 bag dried blackeyed peas
    1 carrot, diced
    1 onion, chopped
    3 cloves garlic, crushed
    3 stalks celery, diced
    3 strips bacon, diced
    4+ cups water
    Red pepper, black pepper, cayenne pepper, hot sauce, thyme and oregano - to taste


Rinse beans, then cover with water in covered pan. Bring to biol and cook for 5 mins., then set aside. Saute bacon in large sauce pan until fat renders, then add onions, garlic, carrot and celery and cook until tender. Add beans, cover with 1 inch of water. Add spices, cover and bring to boil. Lower heat and simmer, covered, for 1 hour. Remove cover and simmer for 30-45 minutes. Servings = 6.
