Introduction

This is the similar to the Crock Pot Salsa Chicken, but with the brand names we use and cream of celery soup instead of cream of mushroom. The breasts we buy are from SAMS club and are much larger. Ingredients

    Place 4 boneless, skinless chicken breasts into crock pot.
    (approximate weight - 6 oz each. or 5 - 4.8 oz breasts.)

    1 cup salsa
    1/4 cup tones taco seasoning
    1 can Campbells Healthy Request Cream of Celery soup

    1 cup dry Texmati Brown Rice
    1/2 cup light sour cream

Directions

Place 4 boneless, skinless chicken breasts into crock pot.
(approximate weight - 6 oz each. or 5 - 4.8 oz breasts.)

Mix together the following in a small bowl:
1 cup salsa
1/4 cup tones taco seasoning
1 can Campbells Healthy Request Cream of Celery soup

Pour over chicken breasts in crock pot.

45 minutes before serving, prepare 1 cup dry Texmati Brown Rice and cook per instructions.

30 minutes before serving, mix in 1/2 cup sour cream to chicken mixture in crock pot.

Serve over 1/2 cup prepared rice.

    I left out the sour cream (which lowers the calorie count, but I really did it because I didn't have any!) and it was still delicious. I ate it over rice, but my daughter wrapped it in a tortilla for a chicken burrito. yum! - 1/25/10
