    4 cups home-made turkey broth
    2 cups frozen mixed vegetables
    1 cup chopped celery
    1 cup chopped leftover turkey meat
    1/2 teaspoon salt

    1/2 cup white rice flour
    1/4 cup tapioca flour
    1/4 cup potato starch
    2 teaspoons baking powder
    1/4 teaspoon salt
    1 egg
    1/4 cup unsweetened soy milk or milk of your choice
    1/2 tablespoon extra virgin olive oil


Put the turkey broth into a large soup pot over medium high heat to bring to a boil. Add the frozen vegetables, celery and salt.

Meanwhile, mix the rice flour, tapioca flour, potato starch, baking powder and salt. Combine the egg, oil and milk.

Add the turkey meat to the soup. Mix the wet and dry dumpling ingredients and spoon onto the soup. Cover and bring to a boil. Reduce heat to low and simmer 10 minutes.
