    1 large egg
    1 tablespoon soy milk or water
    1/2 cup chopped cooked spinach
    1 tablespoon minced jalapeno
    1 ounce feta cheese, crumbled


Preheat oven to 375 degrees. Oil a small skillet or other oven-proof dish.

Beat egg and milk (or water) with a whisk. Stir in remaining ingredients. Pour into pan and bake until set about 20 minutes.
