    2 medium zucchini
    1/2 tablespoon olive oil
    1/4 cup Parmesan cheese
    1/4 cup dry bread crumbs
    1/8 teaspoon salt
    black pepper to taste


Preheat oven to 450. Coat a baking sheet with cooking spray.

Slice zucchini into 1/4 inch thick rounds. In a medium bowl, toss zucchini with olive oil. Combine Parmesan, bread crumbs, salt and pepper. Dip each round into the mixture, coating evenly on both sides. Place in a single layer on the baking sheet.

Bake until browned and crisp, 25 to 30 minutes. Remove with spatula. Serve immediately.
