    1 cup all purpose gluten free flour
    1 cup yellow corn meal
    1/2 cup sugar
    1 1/2 tbs baking powder
    1 1/2 tsp xanthan gum
    1/2 tsp salt
    1 1/4 cup rice dream original enriched rice milk
    3 large eggs
    1/2 cup canola oil


Preheat oven to 350 degrees.
Mix together all ingredients.
Lightly spray a 9 x 13 baking pan.
Spread the batter into the pan.
Bake for 18 to 20 minutes or until the corn bread is done.
Let cool slightly then cut into 12 generous pieces.

    difficult to make so it doesn't crumble apart - 4/10/10

    I had no problem with it crumbling apart. The xanthan gum is key in helping keep things together in gluten free baking.
