Ingredients

    500 g (1 1/4 lb) potatoes
    115 g (4 oz) feta cheese
    4 spring onions, chopped
    3 Tb chopped fresh dill
    1 Tb lemon juice
    3 egg whites, beaten
    flour, for dredging (content calculated on 1/4 cup)
    spritz olive oil for both sides (calculated at 1 Tb)
    salt and black pepper

Directions

Makes four servings, divided equally.

Boil the potatoes in salted water until cooked. Place in a bowl and mash after draining water. Crumble feta cheese into mashed potatoes, and add onions, dill, lemon juice and egg. Season with salt and pepper.

Chill until firm. Divide into walnut-sized balls, then flatten into patties. Dip in flour and place on a baking sheet. Spritz with olive oil, and bake until crispy at 325F.
