Ingredients

    2 tsp. butter, unsalted
    4 medium shallots, thinly sliced
    1 garlic clove, minced
    1/2 tsp. salt
    1/2 tsp. ground pepper
    1/4 tsp. grated nutmeg
    2 c. cubed chicken breast (about 1 lb.)
    2 eggs
    2tsp. cornstarch
    1/4 c. peanut oil or corn oil

Directions

Melt butter in heavy large skillet over medium heat. Add shallots and garlic and saute 2 minutes. Stir in salt, pepper and nutmeg, blending well. Set aside.

Coarsely puree chicken in food processor. Add eggs, cornstarch and shallot mixture and blend well. Heat oil in wok or heavy large skillet over medium-high heat. Add chicken mixture to oil by heaping teaspoons (do not crowd) and brown on both sides, 2 to 3 minutes. Remove with slotted spoon; drain on paper towl. Repeat with remaining chicken mixture. Transfer to platter and serve immediately.
