Ingredients

    8 oz tilapia fillets
    6 tablespoons sweet chili sauce (Mae Ploy is in calorie count)
    juice from one lime
    chopped fresh cilantro
    2 cups thinly sliced cabbage (napa, bok choy, or regular)
    3 large scallions chopped
    6 large mushrooms sliced.

Directions

pour sweet chili sauce, lime juice and half of the cilantro in skillet, do not use oil. heat then add tilapia fillets. Cook one side of fish, turn, then add veggies and the rest of the cilantro. Tilapia cooks fast, so don't over cook the fish. When fish is cooked through, remove to plates, turn up the heat and stir the veggies through the sauce that is still in the pan. Don't over cook, cabbage should still be crunchy and mushrooms should still be firm. Once veggies are well coated, take off heat and pour over fish.
I serve with Basmati rice (not included in calorie count)
