    1 eggplant (approx 1 lb) sliced in 1/4" slices
    1 tablespoon olive oil
    2 ounces shredded part skim mozzerella cheese
    12 ounces marinar sauce (I use Classico)
    2 tablespoons parmesean cheese


Preheat the oven to 400 degrees
Brush olive oil on both sides of the eggplant slices and arrange them on a baking sheet. Bake 8 mins and turn over and bake another 8 mins till slightly browned and soft.
Cool on wire rack

Place one layer of the eggplant slices in an 8x8 dish and top with 1/2 of the marinara sauce. Sprinkle 1 oz mozzerella cheese on top; Repeat another layer of eggplant, sauce and cheese. Top with parmesean cheese.

Bake in a 350 degree oven for approx 20-25 minutes until top starts to brown..or if you want, after 20 minutes set under broiler to brown top.
