    1 tsp Olive oil
    1/2 tsp chopped Garlic
    1 T. Sundried Tomatoes
    1/4 c. Bercy Sauce
    2 T. Soy Feta
    1 tsp Smart Balance
    1 c. Fresh Spinach.
    1/2 c. cooked Penne
    1 tsp toasted pine nuts


Saute garlic and sundried tomatoes. Add Bercy Sauce simmer. Add Butter, 1/2 Feta and pinch of salt and pepper. Add Spinach and pasta. toss well. Top with remaining feta and pine nuts.
