    6 leeks chope top and end removed
    6 potatos (peeled and cubed)
    8 cup broth
    2 tbsp canola oil


Heat oil in large post, add leek and saute fro a few minutes add potatos and saute for 2 more minutes. Add broth. Simmer on high for 5 minutes, cover and simmer low for 30 min. using hand blender, blend together. Add water if soup is too thick, simmer 10 min more.
