Introduction

Spaghetti with Garlic and Oil is an Italian staple, but is very high in fat. Our family recipe cuts the fat significantly, substituting chicken bouillon for the additional oil after the garlic and spices have been sauteed in 2T of olive oil. We enjoy this as a side dish to a piece of grilled fish or chicken and a garden salad.

Ingredients

    8 ounces dry spaghetti
    3 cloves garlic, crushed
    2 T olive oil
    1/2 t crushed red pepper flakes
    1/4 t black pepper (or to taste)
    dash salt (or to taste)
    1/2 cup of chicken bouillon
    1 T chopped basil
    1/2 c chopped flat Italian parsley
    1 ounce of freshly grated Romano cheese

Directions

prepare spaghetti until al dente and set aside; crush garlic cloves, and in a large saucepan saute in oil. When translucent, add red pepper flakes and continue sauteing for another few minutes to season the oil; add chicken broth, salt and pepper. When liquid is heated through, add spaghetti, tossing to coat, and heating (just a couple of minutes).

Portion spaghetti onto plates and sprinkle each serving with freshly chopped herbs and Romano cheese. Serve alongside a piece of grilled fish or chicken and a nice garden salad.
