Ingredients

    1/2 eggplant (cut into strips)
    1/2 tomato (diced)
    1/2 cup pineapple chunks
    1/4 cup extra virgin olive oil

Directions

Saute all ingredients together for 10-15 minutes until eggplant is tender. Add seasoning to taste. Makes 4 servings.
