Introduction

I made this with the wild turkey (and stock from it) that my husband killed this spring...yum! You could certainly substitute chicken and homemade chicken stock in here as well. Ingredients

    8 cups turkey or chicken stock
    8 oz. Mini Penne
    2 c. dark meat from turkey
    1.5 c. Carrots, sliced
    1.5 c. Celery, sliced
    1 oz. Sherry, dry
    1 t. Salt
    1 t. Pepper
    1 t. Parsley

Directions

Makes about 12 cups. Put stock in pot, bring to boil. Add penne, cook about 3 minutes, then add carrots, celery. Cook 5 more minutes, then stir in turkey, sherry, salt, pepper, and parsley. Taste & adjust seasonings. Cook longer if necessary for pasta or vegetables.

    Great way to use up left over Thanksgiving turkey! I also added diced onions, a clove of garlic, sauted with a a bit of crushed red pepper flakes and used no yolk egg noodles as that is what I had. Let it all simmer for a couple of hours on the stove, certainly beats canned soup hands down, thanks! - 11/28/08
