Introduction

Number of Servings: 4

Ingredients

    1 1/2 lb Pork Loin Chops (1/4 thick)
    Green Olive Tepenade
    2 tbsp Extra Virgin Olive Oil
    1 tsp arrowroot
    1 cup cooking white wine

Directions

Makes 4 servings

Pound chop to apx 1/4 thickness. Spread a thin layer of tapenade on top, then roll up. Secure with toothpick if desired. Brown rolls in oil, add 1/2 cup wine and simmer on low for 15 minutes. Remove pork roll and brown drippings. Add remaining wine to pan. Dissolve 1 tsp arrowroot in 1/3 cup water and add to pan. Stir just until thickened. Pour sauce over pork rolls and serve.
