    Potatoes (2 large)
    Light Mayo (5 Tbsp)
    Yellow Mustard (2 tsp)
    Pickle Relish (1 Tbsp)
    Black Olives (10 jumbo)
    Salt (1 tsp)
    Black Pepper (1 Tsp)


* Put large pot of water on stove to boil
* Rinse potatoes, then peel, and rinse again
* Cut potatoes into cube-like pieces
* Add potatoes to boiling water, and boil for 10 minutes
* Slice olives and set aside
* Strain potatoes and pour into large bowl
* Add mayo and mustard, mix well
* Add relish and olives, mix well
* Add salt & pepper, mix well
* Cover and refrigerate for at least 30 minutes before serving
* Add relish
