    1 cup mashed bananas
    1 tsp baking soda

    2 Large Eggs

    1/4 cup Soft Margarine
    1 cup pacekd brown sugar

    1 1/2 cups all purpose flour
    1 1/2 tsp baking powder
    1/4 tsp salt


in small bowl stir masthed banana and baking soda together. set aside

beat eggs in small mixing bowl until frothy.

cream margarin and sugar in large mixing bowl. add 1/2 eggs. beat to mix. add second 1/2 eggs. beat in. stir in mashed banana.

add flour, baking powder and salt. stir to moisten. spoon into 9 x 5 inch (23 x 12 cm) loaf pan that has been sprayed with no stick cooling spray.. bake in 350F (175C) oven for about 1 hour till pick in center comes out clean. cut into 16 slices.

  • very good..I found the batter to be really thick b4 I put it in the loaf pan so i added a tiny bit of milk to thin it a little..will try this recipe as muffins next time - 5/9/08
