Ingredients

    2 cups cooked, mashed sweet potatoes
    1/2 cup butter, softened
    4 eggs
    1 1/2 tsp nutmeg
    dash cinnamon
    1 cup sugar
    1 1/2 tsp vanilla
    1/2 cup milk

Directions

Mash the potatoes and butter together, add eggs, sugar, nutmeg, cinnamon, and vanilla, blend until well mixed. Cover and let stand overnight in the fridge to set.

Turn into a pastry shell (not included in nutritional values) or into a greased pie plate or small casserole. Bake at 350 degrees for 1 1/2 hours or until golden brown on top, covering crust edge with foil if needed.
