Introduction
I live an hour from the Louisiana border, which apparently qualifies me to create my own version of the classic Cajun rice dish. This is just stupid easy to make and much less expensive than a mix. Ingredients

4 cups brown rice
2 Tbsp Catsup
2 Anaheim Chile Peppers
1 large Chicken Breast, no skin, excess fat trimmed
3 links Johnsonville New Orleans Andouille sausage
1 tsp (approx) Blackened Seasoning
1.5 tsp (approx) cajun seasoning
0.5 tsp Cayenne Pepper (Ground)***
.5 Tbsp Extra Virgin Olive Oil
Salt and Pepper to taste
Directions
Start rice cooking in separate pot
Meanwhile, cut peppers, chicken and sausage into small chunks.
Saute peppers in olive oil and splash of water in a large pan until just beginning to soften, add chicken, sausage, and blackened seasoning and continue to saute until chicken is cooked through.
Combine meat/pepper mix with rice and all remaining ingredients and serve.
***As written, this recipe is SPICY! To tone it down, reduce the amount of Cayenne or skip it completely.
