Ingredients

    Red Ripe Tomatoes, 6 Italian tomato seeded and peeled
    Garlic, 1/2 clove
    Vegetable Juice Cocktail (V8), 1/2 cup Onions, raw, 2 tbsp chopped
    Olive Oil, 1 1tsp
    Fat Free Buttermilk, 1 Tbsp
    Basil, 1/2 tsp
    Salt, 1 dash
    Pepper, black, 1 dash (remove)

Directions

Saute onion and garlic with olive oil until translucent to starting to brown. If using dried basil, add to this and stir before adding tomatoes and juice. If using fresh basil, chop finely and add with tomatoes.
Heat through, then add buttermilk.
Use blender, immersion blender, or processor to smooth out the soup. Salt and pepper to taste.
