    225 g (8oz) Linguine
    1 tbsp olive oil
    1 medium onion chopped
    3 clives of garlic chopped fine
    1/4 cup parsley
    1 tbsp lemon juice
    1 1/2 tsp oregano
    1 tsp basil
    1/4 tsp pepper
    1 cup ricotta part skim
    1 egg white
    1/4 cup parmesan shredded
    2 medium tomatoes sliced
    1/4 mozzerella part skim


preheat oven to 375. Lightly grease an 8 inch spring form pan
Cook linguine as per package instructions omitting the salt. Drain and rinse with cold water. set aside.
Heat olive oil 1 minute over medium heat and add oinion and garlic cooking for about 5 minutes uncovered. Add in the linguine, parsely, lemon juice, 1 tsp oregano, 1/2 tsp basil and pepper and mix well.
In a small bowl mix the ricotta, egg white, par,,esan and the rest of the oregano and basil.Add this preperation to the linguine and mix well.
Place half of the lingine mix in the pan and pack it into the bottom. Cover with half of the tomatoe slices and half of teh mozzerella. Add remainder of linguine mix and top with rest of teh tomatoes and mozzerella.
Cover with alluminum foil and cook for 40 minutes. Remove aluminum foil and cook another 5 minutes. Remove from oven and let stand 10 minutes.

* can be served as 4 large slices or 8 small slices
