    4 tbsp very cold smart balance (in freezer)
    0.75 cups rolled oats (blended into flour)
    1 tbsp potato starch + more for rolling
    1/2 tbsp sugar
    1-2 tbsp ice water


Grind oats in food processor until it resembles flour. Add potato starch and sugar and pulse. Cut smart balance into small chunks and add 1-2 pieces at a time pulsing until mixture resembles coarse cracker crumbs. Drizzle in the water a little at a time just until dough forms a ball. Remove onto plastic wrap and press into flat disc. Refrigerate at least 30 minutes. Remove from 'fridge and roll out. Put in pie pan. If pre-baking the crust, put in to 425F oven for 7-9 minutes until golden.
