Number of Servings: 2


    Chicken Breast, no skin, 2 breasts (approx 3.5 oz each)
    Mushrooms, fresh, 1 cup, pieces or slices
    Scallions, raw, 1 tbsp chopped
    *Fat free half and half, 4 tbs
    *Flour, white, .03 cup
    *Wine, Marsala Cooking Wine, 4 tbsp


*defrost and pound chicken breast to 1/4 in thick

*lightly season with salt and pepper and dust with flour

*brown chicken breast in olive oil/butter mixture until light golden brown

*take chicken out, in same pan--add mushrooms and scallions and sautee

*when mushrooms are cooked down, sprinkle with remaining flour and cook for another minute or two

*add marsala wine to pan to deglaze and allow sauce to thicken

*put chicken back into mushroom/marsala mixture and stir in half and half. simmer on LOW for 10-15 more min until flavors are combined.

*do not allow to boil--will cause cream to seperate.
