Number of Servings: 6

Ingredients

    125ml WW Balsamic Dressing
    2 tsp curry powder
    2 Tbsp minced red onion
    1 clove crushed garlic
    150g bhuja snack mix, mild or hot
    120g rocket
    1 mango
    3 courgettes

Directions

Combine the dressing, curry powder, red oinion and grlic in a small bowl and set aside.

Place the bhuja mix and rocket in a large mixing bowl. Slice the cheeks off the mango, cut away and discard the skin then cut the flesh into slices. Using either a slicing machine or vegetable peeler, thinly slice the courgettes into ribbons. Add the mango and courgettes to the mixing bowl.

Just before serving, gently toss the salad ingredients with the drassng then transfer to a serving bowl.
