    1 cup frozen spinach (81 g)
    3/4 cup frozen broccoli (85 g)
    1 Ortega chile (anaheim), diced
    1 serrano chile, minced
    1 ounce reduced fat cheddar cheese, grated
    2 extra large eggs
    2 tablespoons milk of choice
    1/4 to 1/2 teaspoon garlic salt
    1/4 teaspoon lemon pepper


Thaw spinach and broccoli, drain any excess water.

Heat a small cast-iron (or other oven proof) skillet over low heat. Preheat broiler, positing rack towards top.

Combine the spinach, broccoli, chilies and cheese.

Beat the eggs with the remaining ingredients and add to the vegetable mixture.

Add the olive oil to the skillet and tilt to coat surface. Pour in egg mixture and saute 5 minutes. Transfer skillet to oven, and broil until frittata is set and begins to brown.

Serves 2.
