Ingredients

    1 - 6oz can boneless, skinless salmon (or other if you're willing to put in more effort)
    1 celery stalk, finely chopped
    About 3 large baby carrots, finely chopped
    1 Tbsp light mayonnaise or whipped salad dressing
    3 Tbsp fat free sour cream
    1 Tbsp dried dill or 2-3 Tbsp fresh
    Lemon Juice and Black Pepper to taste
    6 slices of whole wheat bread or toast
    Lettuce

Directions

After draining salmon (rinse to get rid of more of the salt), combine with all remaining ingredients except bread and lettuce in a small bowl.

Spread salmon mixture over bread or toast , top with lettuce and serve.

Leftover salmon mixture (this recipe is enough for roughly 3 sandwiches) can be stored in fridge for up to 48 hours.
