    1 butternut squash Peeled, seeded and cubed
    1/2 c mayo
    1/2 c finely chopped onion
    1 egg, lightly beaten
    1 tsp brown sugar
    salt and pepper to taste
    1/4 cup panko crumbs
    2 tbs grated parmesan cheese
    1 tbs melted butter


1. Preheat oven to 350 degrees
2. In a large pot, bring the squash to a boil. Reduce to simmer until squash is soft
3. In a large bowl, mash the squash. Mix in the mayo, onion, egg, brown sugar, salt and pepper. Pour the mixture into a 2 qt baking dish
4. In a medium bowl, mix the panko, parmesan cheese and butter. Sprinkle over the squash mixture
5. Bake uncovered in preheated oven for 35-45 minutes, until the topiing is lightly brown.
