    1 teaspoon extra virgin olive oil
    1 cup diced red onion
    2-3 serrano peppers, minced
    2 cups beef stock (no salt)
    1 cup refried beans
    1 can diced tomatoes
    2 cups cooked pork/chile verde
    1 can corn, drained
    1/2 to 1 teaspoon garlic salt
    2 tablespoons tomato salsa of choice
    2 tablespoons chopped cilantro (optional)

    4 corn tortillas


Heat the oil in a soup pot over medium heat and saute the onion until softened, 5 minutes. Add the serranos and saute 1 minute. Add the remaining ingredients, bring to a boil, lower heat and simmer until onion is cooked to your liking. If desired sprinkle with cilantro. Adjust seasoning.

While soup is cooking: Preheat oven to 400 degrees. Cut the corn tortillas into 1 x 1/4-inch strips. Put on a baking sheet and spritz with cooking spray. Bake until crispy.

Serve soup with tortilla strips.
