    2 1/2 cups frozen mixed vegetables
    1/2 cup chopped onion
    2 T olive oil
    1/3 cup all purpose flour
    1/2 t dried sage leaves
    1/2 t black pepper
    1/4 t salt
    2 1/4 cups chicken broth
    3/4 cup skim milk
    2 cups cooked chicken cut in cubes
    1 can sliced potatoes drained and quartered
    1 1/3 cups shredded cheddar cheese
    1 cup seasoned stuffing cubes
    cooking spray


Cook mixed vegetables according to package directions, drain. Meanwhile, in a large saucepan, sauté the onion in the olive oil for 3 minutes. Stir in 1/4 cup of the broth, the flour, sage, pepper and salt until blended. Gradually add the broth and milk. Bring to a boil, cook and stir until thickened. Stir in the chicken, potatoes and vegetables. Heat to boiling.
Transfer to a greased 13 in x 9 in x 2 in baking dish. Spread cheese over chicken mixture. Sprinkle seasoned stuffing cubes over cheese. Spray bread cubes with cooking spray. Bake uncovered at 450 degrees for 10 to 12 minutes or until browned.
