This makes 1 large pancake - perfect for the single person to make for a Sunday morning breakfast. It's low in fat, wholesome and delicious - very light and tasty! Ingredients

    1/4 cup Buttermilk
    1 tsp. cinnamon
    dash of salt
    1/2 tsp. Vanilla Extract
    1/2 tsp. Canola Oil
    1/2 tsp. Baking Powder
    1/4 c. Whole Wheat Flour
    1/4 cup Quick Eggs egg substitute
    1 T. Protein Powder

    Mix wet and dry ingredients separately, then add wet to dry and lightly combine (do not overmix as this will turn batter tough). Cook on griddle and serve.

Directions

Makes 1 large pancake (or 2 smaller ones)
