    4 medium eggs
    1 tbs olive oil
    1/3 of a cup grated parmesan or similar style cheese
    2 tbs basil or parsley
    1/2 cup nonfat milk (optional)
    6 slices of parma ham (prosciutto)


Beat the eggs together with the cheese, the basil, the milk and a bit of pepper to taste. No salt required because of the cheese.
Heat the oil in a pan and then throw the mixture. Fry for 10 minutes and then either turn the omelette over to the other side or put it in the grill for another 10 minutes or till cooked all over.
Then, cut the omelette into 6 pieces and put each prosciutto slice around them. Enjoy while hot!
