    Cauliflower, cooked - 2.5 cups
    1 can College Inn Chicken Broth (99% fat free)
    1 tsp of EVOO to sautee if desired (leave out to reduce fat cals even more - but this is a good fat, so don't feel to bad about it if you leave it in)


If you have leftover cauliflower, this recipe is great for that..reserve about 2.5 cups out of a whole cooked head.

For example:
Microwave whole cauliflower head in a large bowl until fork tender. For added flavor and depth, drain and then sautee in Extra Virgin Olive Oil and add salt & pepper. This make a great side dish.

Take the 2.5 cups of the prepared cauliflower and cut it into little bits...the size is according to your liking. A thinner soup = larger bits. A thicker soup = mashing the cut up bits with a potato masher. Add this to a small pot and add the can of Broth. Season to taste. and simmer for a half hour so that the broth infuses into the cauliflower.

Eat right away or store in the fridge and eat it for lunch the next day. You can eat it all without too much guilt.

Serves 2 if divided in half.


I'm sure you can subsitute frozen cauliflower without any problem in the calorie department.
