Number of Servings: 6


    1 stick butter, divided
    1 c. celery, chopped
    1 c. onion, chopped
    2 T. flour
    1 lb. potatoes
    1/2 t. salt
    pepper to taste


Melt 2 T. butter in large pan. Add celery and onions and cook over med. heat for 5 min. stirring often.
Sprinkle flour and cook, stirring constantly for 1 min.
Add milk, stir and cook for another 1 min.
Remove from heat and place mixture in a mixing bowl to cool.
Wash potatoes, but don't peel them. Shred them using a food processor or salad shooter. Add potatoes to veggie mixture and add the salt and pepper. Mix well.
Melt more butter in pan. Add 1/2 c. of hash mixture to pan, forming a patty about 2 inches thick. Place as many patties as your pan will accomodate without being crowded.
Cook over med. heat for 3 min. Flip, reduce heat to low and cook another 5 min.
Remove from pan to cool to freeze or keep warm in oven to eat soon.
To freeze, place each patty between plastic wrap, seal in a freezer container. Freeze for up to 6 months.
