    3 small to medium sweet potatoes
    3 Tbsp butter


Wash the potatoes thoroughly and pierce the skins with a fork.

Cook the potatoes in the microwave or oven until soft.

Slice cooked potatoes open lengthwise and let cool, briefly, enough to handle. Scoop pulp out into a medium bowl. Discard skins.

Add 3 Tbsp of butter, sliced thin. Mash together with a fork.

Makes 4 3/4-cup servings.

For sweeter potatoes, add 2 T brown sugar and some cinnamon.
For added punch, use 2 T butter and 1 oz whisky or spiced rum (a GREAT compliment to steak).
