Introduction

Number of Servings: 2

Ingredients

    1 package firm tofu
    1 small onion, cut into wedges
    1 bell pepper, diced or cut into strips
    5 baby carrots, diced
    1 tbsp vinegar
    1/4 cup soy sauce
    1 tsp sugar
    2.5 cups water
    1/2 tbsp potato starch (you can also use cornstarch or any thickening agent of your choice)

Directions

Press out as much water as possible from tofu and then cut into cubes.

Saute veggies until crisp but tender.

Add tofu, water, soy sauce, vinegar, and sugar. Bring to a boil and let it cook for 5 minutes.

Mix potato starch with a little bit of cold water and add by spoonfuls. Cook for a minute or so.
