    2 eggs
    2 cups sugar
    1 cup shortening
    1/2 cup smart balance butter sticks
    1/2 cup molasses
    1 t. ginger
    2 t. cinnamon
    5 t. baking soda
    1 t. salt
    2 t. vanilla
    4 cups unbleached flour


Mix eggs, sugar, shortening, vanilla and molasses. Cream. Then gradually add remaining ingredients until stiff dough forms. Chill for several hours. Roll into balls about the size of a hickory nut. Roll in sugar and bake for 8-10 minutes in 350 degree oven. Makes about 65 cookies.
