Ingredients

    1/3 cup oil or melted butter
    1/2 cup honey
    2 eggs, beaten
    1 cup bananas, mashed (about 3 medium)
    1 3/4 cups whole wheat flour
    1/2 tsp. salt
    1 tsp. baking soda
    1/2 cup pecans, coarsley chopped
    1/4 cup hot water

Directions

Makes 12 muffins

Preheat oven to 400
Lightly butter muffin pans
Mixt together the oil and honey.
Add the beaten eggs and mix well.
Stir in the mashed bananas.
In a separate bowl, mist together the flour, salt, baking soda and pecans.
Alternately add dry mixture and hot water to banana mixture, mixing after each addition.
Pour into butter muffin pans.
Bake approximately 18 minutes.
Cool 5 minutes in the pan.
Remove from the pan and coll on a wire rack.
