Introduction

I tried this recipe on a whim and was verry plesantly suprised. it is a little bland but a touch of pepper makes all the difference. Make sure to add the prosccuito (uncooked meat that should be able to be obtained at any deli) because it adds a lot. if you are on a low sodium skip the meat and spice up the soup. Buon Appetito! Ingredients

    1 14oz can reduced-soduim chicken broth

    1/4 C Water

    1 yellow flesh potato

    1 Med shallot, thinly sliced

    1/2 tsp dried tyme

    1/2 tsp dried savory or marjoram leaves

    1/8 tsp salt

    12 oz asparagus, woody ends removed and sliced into 1
    inch pieces

    1 clove garlic

    3 slices prochuitto (about 2 oz)

    pepper to taste

Directions

1. place broth, water, potato, shallot, garlic, thyme, savory (or marjoram) and salt in large saucepan. Bring to boil over high heat.
2. reduce heat to med/low and cover. Simmer until potato is tender (aprox 8 min)
3. Add asparagus, return to simmer. Cook covered until asparagus is tender (aprox 5 min)
4. After adding asparagus cook proscuitto in a small skillet over med heat, stir constantly until crisp (aprox 5 min)
5. Pour soup in a large blender, puree until smooth scraping sides if necessary. Season with pepper, top with procuitto
