Ingredients

    2 cups turkey breast meat, cooked and chopped
    24 oz cooked pasta (12 oz pkg uncooked)
    1 shallot, chopped
    2 green onions, chopped
    2 T minced garlic
    4 oz can mushrooms, chopped
    1 stick margarine
    3 T flour
    salt & pepper to taste
    1 1/2 cups skim milk
    4 oz neufchatel cream cheese
    1/3 cup fat free sour cream
    1/2 cup reduced fat shredded Mexican blend cheese
    1/3 cup reduced fat grated parmesan cheese

Directions

Melt margarine in a pot on the stove. Add shallots, onions, and garlic and cook until soft. Add flour and cook until blended. Add mushrooms, 1 cup milk, sour cream, and cream cheese and stir until melted and blended throughout. Add another 1/2 cup milk if sauce becomes too thick. Add salt, pepper, turkey, and pasta and toss to coat. Top with shredded cheese and parmesan cheese. Bake 30 minutes at 375 degrees.
