    2 tbsp olive oil
    3 cloves garlic, finely choopped
    1 tsp hot red pepper flakes
    1 19 oz/ 540 ml can chickpeas, drained and rinsed
    1/4 cup chopped sun-dried tomatos
    8 cups rapini, coarsely chopped
    1 tbsp lemon juice
    salt/pepper to taste


In a large skillet, heat oil over medium-high heat. Add garlic, hot pepper flakes chickpeas and tomatos. Cook, stirring for 2 to 3 minutes or until garlic is fragrant and chickpeas are heated through.
Add rapini to skillet, Cover and cook for 3 minutes until rapini is wilted. Season with salt & pepper. Continue cooking, uncovered until moisture has evaporated. Just before serving, add lemon juice.
Serve hot or at room temperature.
