    1/4 c bulgur
    5 oz water
    2 c parsley
    3/4 c tomatoes
    1/8 c chopped green onions
    1/8 c chopped mint
    1/8 c lemon juice
    1/8 t garlic, pinch of salt
    T EVOO.


Boil water, add bulgur, stir, cover, and turn off heat. Let stand 20-25 minutes or until most of liquid is absorbed. Pour off remaining liquid. In small bowl, whisk together lemon juice, garlic, salt, and oil. In large bowl combine all ingredients and toss to coat.
