Introduction
The nutrition facts state high sodium, but I rinsed the kraut and beans to help bring this down.I garnished this with a couple of Abraham's Guiltless Onion Rings (recipe on SparkRecipes) for a nice crunch. Ingredients

2 tbsp Extra Virgin Olive Oil
1/2 White Onion, chopped
3 Cloves Garlic, chopped
2 Yukon Gold Potatoes, diced
1 tsp Dried Thyme
2 bay leaves
1 lb Pork Tenderloin, cubed
4 cups Low Sodium Chicken Broth
4 cups Water
1/4 cup Sherry, dry
1 can Cannellini Beans
1 can diced Fire Roasted Tomatoes (w/ garlic)
1 can Sweet Kraut (bavarian style)
1 cup French Bread Crumbs or Cubes
Directions
1. Saute onions, garlic and potatoes in olive oil in a large pot over medium high heat
2. Add herbs and pork and continue to saute
3. When vegetables are softened, add chicken broth, water and sherry
4. Rinse beans and kraut and add to pot with tomatoes
5. Add bread crumbs or cubes, this will thicken the brothas it cooks
6. Reduce heat and cook for 30 minutes
