    1/4 cup milk (I use soy milk)
    1 large egg
    1/2 cup whole grain flour (I use spelt)
    1 teaspoon baking powder
    1/4 teaspoon Kosher salt
    1/2 teaspoon sugar
    1 can corn, drained
    Olive oil


Preheat a nonstick or cast-iron skillet over medium heat.

Put the milk and egg in a small bowl and whisk to combine. Add the remaining ingredients and stir swiftly to combine. Do not over mix.

Oil the skillet by spritzing with cooking spray (I have spritzer with olive oil) or wiping with an oiled paper towel. Cook pancakes by tablespoons. When bubbles start to appear and underside is brown, turn and brown other side.
