This is a hearty and thick stew. It is very filling and great on a cold winter's day. This is a hearty and thick stew. It is very filling and great on a cold winter's day.

    2 lbs venison stew meat (trimmed of all fat)
    2 tsp minced garlic
    1 - 1 lb 4 oz pkg diced potatoes with onions
    4 cups frozen mixed vegetables
    4 pkts brown gravy mix
    3 cups water
    1/4 tsp ground thyme
    1/8 tsp tarragon


Spray non-stick skillet with cooking spray. Brown venison with minced garlic.

Put water, vegetables, potatoes with onions and browned meat mixture into crock pot (including liquid, which will be about a cup bringing liquid in crock pot to four cups). Turn on high for 4 to 6 hours or low for 8 to 10 hours.

About 1 hour before eating, put all four packets of the dry brown gravy mix into a mixing cup or bowl. Add enough water to make a thick paste (less than 1/2 cup cold water). Mix until no lumps, adding small amounts of water if needed. Once gravy mix is a smooth paste, gradually add water until it is a thick liquid (about 1/4 cup water or so), mixing well each time water is added. Add prepared gravy mix to the crock pot. Stir well to mix in.

Sprinkle the ground thyme on top of stew. Mix well. Grind the tarragon thoroughly. Sprinkle the ground tarragon on top of stew. Mix well.

Ensure crock pot is on high, leave cover off. Stir mixture every 10 minutes or so to ensure the gravy stays mixed. Stew should thicken as it heats the gravy.
