    2 tbsp olive oil
    2 large onions, chopped
    3 cloves garlic, minced
    1 tsp thyme, dried
    1/2 tsp each; turmeric, cinnamon, & ginger
    1 Pinch salt & pepper
    3 tbsp whole wheat flour
    2 sweet potatoes, peeled and cubed
    1 19 oz can chickpeas, drained & rinsed
    1 19 oz can tomatoes, chopped
    1 sweet red pepper, chopped
    3 cups vegetable stock
    14 oz artichoke hearts, drained and quartered
    1/2 cup olives, black
    2 tbsp lemon juice
    1/4 cup cilantro, fresh and chopped
    1/4 cup almonds, sliced, toasted


In a large saucepan, heat oil over a medium high heat.
Add onions, garlic, thyme, turmeric, cinnamon, ginger, salt and pepper; Cook, stirring occasionally for 5 minutes or until the onions have softened.
Sprinkle with flour; cook for 1 minute while stirring.
Stir in potatoes, chickpeas, red pepper, tomatoes, & stock; bring to a boil.
Reduce heat, cover and simmer, stirring occasionally for 30 minutes or until the vegetables are almost done.
Stir in the artichoke hearts, olives and lemon juice; simmer for 5-10 minutes; until the vegetables are done.
Stir in the cilantro and serve garnished with toasted almonds.
Serves 6, feel free to serve with rotini, penne or brown rice.
