    1/2 teaspoon extra virgin olive oil
    1 cup diced onion
    1 cup diced green bell pepper
    4 extra large eggs
    1/8 cup milk
    1/4 teaspoon garlic salt
    2 ounces diced ham
    2 ounced reduced fat cheddar cheese, grated


Preheat broiler. Heat the oil in an oven proof skillet over medium low heat. Add the onion and bell pepper and saute until slightly tender. Beat the eggs with the milk and salt. Stir in the ham and 1/2 of the grated cheese. Pour over the onion/bell peppers and stir to distribute the ingredients. Reduce heat to low, cover, and saute 4 minutes. Sprinkle with remaining cheese and broil until cheese melts and starts to brown, about 3 minutes.
